Ingredients:
2 boneless, skinless chicken thighs
1/3 Cup honey
1/3 Cup fresh orange juice plus 1 Tsp zest
3 Chipotle chiles plus
1/4 cup adobo sauce
3 Garlic gloves, finely grated
1 Tbsp olive oil
1 Tbsp Tajin Clasico
8 Scallions trimmed
1/3 Cup cilantro
Directions:
Blend honey, orange juice & zest, chipotles, adobo, garlic, olive oil, and Tajin in a medium bowl.
Brush the mixture onto the salted chicken breasts.
Place chicken onto the grill and cook for 7 to 9 minutes or until cooked through.
Brush the chicken with the remaining mixture while it is cooking.
Add the onions to the grill and cooked until lightly charred on all sides. You can brush the onions with any remaining mixture.
Yield: Two servings
