Tlayudas de Pollo

 

Ingredients:


3 White corn tortillas
1 Cup shredded chicken
1 Cup refried beans
1/2 Cup green chile sofrito
3/4 Cup shredded Oaxaca cheese
1/4 Cup chopped tomatoes & cilantro

Directions:

Place the tortillas on a baking sheet and plaace in a 350° oven for ±10 minutes, until they begin to stiffen and brown.

Spread the refried beans over the tortillas, followed by the shredded chicken.

Cover with sofrito, and finally the cheese.

Return to the oven until the cheese is melted. Add tomatoes and sour cream and garnish with cilantro.

Yield: 1 1/2 tortilla each will serve 2. They're filling.

The recipe is not fixed and you can add whatever topping is appealing.
